Spicy Cider Tomato Soup posted by Les Knowles
Ingredients:
1 large or 2 medium white onions, chopped
3 large carrots chopped
6 garlic cloves chopped
1 can of cider
1 pint chicken or vegetable stock
3 x 440g tins of chopped tomatoes
2 tablespoons olive oil
1 tablespoon dried chopped basil
1 tablespoon chopped fresh parsley leaves
1/2 teaspoon red chilli flakes
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
Fresh basil leaves for serving
Salt & pepper to taste

Heat the oil in a large pan/pot, fry the onions for 3 minutes then add the garlic and carrots, lower the heat & fry until the carroys have softened and the onions have become translucent.
Pour in the cider, chicken/vegetable stock and tins of tomatoes. Bring to the boil then simmer gently for 15 minutes.
Put in all the herbs 7 spices except the fresh basil. Stir & simmer for another 30 minutes
If you prefer a smooth soup, blend all the soup and serve with a garnish of fresh basil leaves.
if you like a 'chunky' soup, take out about half the soup and blend until smooth, then return to the pot/pan and serve with a garnish of fresh basil leaves.
